Polar-Honey Pancake Recipe


Our Polar-Honey Pancake is a perfect snack for the late summer months, due to still having an overflow of fresh strawberries, raspberries and blueberries.

You can also enjoy it anytime during the winter months, by just replacing the fresh berries with frozen ones. 😊


  • 50 g butter
  • 75 g Nordic Summer
  • 8 dl milk
  • 2 eggs
  • 1 tbsp vanilla sugar
  • 1 tsp salt
  • 1 tsp baking powder
  • 400 g flour


  • strawberries
  • blueberries
  • raspberries
  • If you like: ice-cream

baking tray (ca. 30 x 38 cm)  

Special! If you’d like to give your dough a unique flavor, you can exchange a part of the milk with eg cream, yoghurt or curd cheese!


  1. Melt the butter and honey
  2. Mix the milk with the eggs
  3. Add the remaining ingredients, as well as the butter-honey mix.
  4. Place the dough in the fridge for 15-30 minutes.
  5. Spread the dough on a buttered baking tray (or a tray covered with a baking sheet)
  6. Place it in the oven for approx.. 35 minutes on 200 degrees.
  7. Wait until it’s cooled down a bit, then decorate it with your berries. Your pancake is ready to enjoy!
