Honey-Gazpacho

Honey-GazpachoEspecially during hot summer days, many of us don’t feel like cooking or eating something hot.

Gazpacho is perfect for those days, since it’s served cold but still supplies you with important vitamins and nutritions due to its ingredients.

Ingredients (for 3):

  • 500 g                  tomatoes
  • 175 g                  bell pepper (green and red)
  • 125 g                  fresh cucumber
  • 20 g                     onion
  • 0,5 dl                  tomato juice
  • 0,1 dl                  olive oil
  • 1 pinch              garlic powder
  • 2 tbsp                Arctic Honey
  • 1 pinch              sherry vinegar
  • 1 pinch              salt
  • 1 pinch              black pepper

Preparation:

  1. Peel the tomatoes and remove the seeds (you can also use the entire tomato).
  2. Remove the seeds from the bell peppers and cut the cucumber into small pieces.
  3. Peel the onion and also cut it into small pieces.
  4. Add all the vegetables to a bowl and marinade them with the olive oil, garlic powder, honey, vinegar, salt and pepper. Let them marinade for about 5 minutes.
  5. Then add everything into eg a blender. If the soup is too thick for your taste, you can add the tomato juice.
  6. The soup goes into the fridge and is served chilled.
