Walnut-Avocado-Burger

Walnut-Avocado-BurgerFitting the beloved barbecue season, we made also a veggie burger. Our honey, jam and mustard add the very special flavor to it, which will be a delight for every burger-lover! Perfect for evenings with friends and family or for a nice time-out by yourself!

Recipe for 2 Burger

Burger-Patties:

  • 250 g kidney beans (400 g can)
  • 85 g onion
  • 1 garlic clove
  • 60 g oats
  • 25 g flour
  • 1 tbsp olive oil
  • 1 tbsp soy sauce
  • 1 tbsp Feisty Feline mustard
  • ½ tbsp vegetable broth
  • 2 tsp paprika powder
  • 1 tsp caraway
  • ⅛ tsp cayenne pepper
  • salt and pepper

You can also use ready-made patties!

Dressing:

  • 200 g Turkish yoghurt
  • 3 tsp Horsma honey
  • 3 tsp Feisty Feline mustard

Topping:

  • 1 avocado
  • 1 tomato
  • salad
  • 100 g walnuts
  • 3 tbsp Horsma honey
  • 2 burger buns
  • butter

Preparation:

  1. Begin with the Patties: Rinse the kidney beans and slice the onion.
  2. Press the garlic.
  3. Heat up the oil in a pan and sauté the onion for approx. 7 minutes. Add the garlic and let it sauté for one more minute
  4. With a fork, mash the kidney beans inside a bowl and add the onion, oats and flour.
  5. Add the soy sauce, vegetable broth, mustard, paprika powder, caraway and cayenne pepper.
  6. Knead everything and add salt and pepper
  7. Leave the dough for a couple of hours hours in the fridge.
  8. Now you can start preparing the dressing.
  9. In a bowl, mix the yoghurt with the honey and add the mustard. You can add as much as you like, so it suits your preferences!
  10. When everything is mixed, place the bowl inside the fridge
  11. Cut the avocado into slices and caramelize the walnuts. Simply heat up a pan with the walnuts and add the honey until they are caramelized!
  12. When the dough has been in the fridge for long enough, start forming the patties and put them on the barbecue.
  13. Spread some butter on the insides of the buns and place also them on the barbecue.
  14. When everything is ready spread the dressing on the insides of the buns.
  15. From bottom to top start layering: 2 tomato slices, the salad, patty, avocado and walnuts.
  16. And ready is your burger!
