Vanilla-Honey-Ice-CreamTo make the coming heat waves a little tastier and to cool down, we have decided to share a recipe for a delicious honey ice cream!


  • 100 g Taiga Lapland Honey
  • 50 g Puolukka Lapland Honig
  • 1 vanilla bean
  • 4 egg yolk
  • 175 g Kefir
  • ½ fresh orange
  • 100 ml cream
  • 25 ml sweet cream


  1. Mix the honey and egg yolk in a bowl and add the vanilla paste from the vanilla bean, together with the orange zest.
  2. Mix the cream with the sweet cream and whip them. Carefully add the Kefir and mix it well with the honey-vanilla mixture.
  3. Put the mixture into a freezable bowl and leave it in the freezer for several hours (preferrably over night).
  4. Then your refreshing ice-cream is already ready! (If you don’t like Vanilla, you can also skip adding it)

Decorate your ice-cream with handmade marzipan-bees! You only need yellow and white marzipan and dark cooking chocolate. Leave the plate in the fridge for everything to harden.
We also added some of our lingonberry jam and fresh cloudberries, to make it extra delicious!
