Rhubarb cake

Rhubarb cake with Raspberry Kiss HoneyIngredients:

  • 70 g molten butter
  • 140 g Arctic Honey
  • 1 egg
  • 240 g wheat flour
  • 2 tsp baking powder
  • 2 dl milk

Filling:

  • 340 g fresh rhubarb
  • 210 g Raspberry Kiss honey
  • 170 g fresh strawberries

Glacing:

  • 150 g quark
  • 1 egg
  • 2-3 tsp vanilla sugar
  1. Rhubarb and Raspberry Kiss honeyAs first step, clean the rhubarb and strawberries. Cut the rhubarb into approx. 1-inch pieces. If you prefer, you can also peel it. Now use a microwave safe bowl, to mix the rhubarb and Raspberry Kiss Honey. Heat up the mix in the microwave until the rhubarb is soft but still remains its piece texture. Remove the liquid and place it aside.
  2. Mix the egg und Arctic Honey. Stir quicker, while adding the molten butter, milk and flour-baking powder-mix. Mix everything until the dough reaches a smooth texture.
  3. Now place the dough into a high and buttered cake base dish. Add the rhubarb and strawberries on top.
  4. Next, mix the quark, egg and vanilla sugar. Spread everything over the rhubarb-strawberry-mix.
  5. Bake everything for 35 minutes (175 Celsius, 350 Fahrenheit) until it it is golden.
