As first step, clean the rhubarb and strawberries. Cut the rhubarb into approx. 1-inch pieces. If you prefer, you can also peel it.
Now use a microwave safe bowl, to mix the rhubarb and potato starch. Add the honey. Heat up the mix in the microwave until the rhubarb is soft but still remains its piece texture. Remove the liquid and place it aside.
Crumble: Melt the honey and butter together in a pot. Then mix in the oats and wheat flour and continue stirring until they become crumbles.
Butter a fitting oven dish and spread the rhubarb-mix and strawberries in it. Add the crumbles on top. Now everything goes into the oven for 25 minutes (200 Celsius, 400 Fahrenheit) until the crumbles are golden.
Serve the crumble with ice cream.
