The shortening days at the end of the summer encouraged our bees to visit heather flowers. The consistency of heather honey is unique, almost like jelly, and the intense foresty flavor is a great addition to tea. The lovely consistency is also great as a spread on cookies or bread.
Our wonderful kitchen wizards have tested various recipes again to share the best ones with you. This recipe follows a Scottish tradition, which glazes a whole chicken with heather honey and curry mustard!
Heather honey chicken
A whole chicken
0,5 dl vegetable oil
75 g heather honey
75 g Bear Claw-mustard (or plain mustard und curry powder)
Crushed garlic or garlic powder to taste
Salt and pepper
Lay the chicken in an oven dish. Mix the other ingredients and pour them over the chicken. Cover the oven dish with a tinfoil and fry the chicken for one hour in 200°C. Carefully glaze the chicken with the liquid from the oven dish. Place the chicken in the oven and fry it for additional half an hour without the tinfoil. When the chicken is golden brown and done, take it from the oven. Serve with mashed potatoes and boiled vegetables.
